Homemade organic jello?????

Something I made today. I was thinking about starting a little business because I would love to buy something like this in the store. Call me crazy....like my husband does at least once a day....but it was pretty good.

Recipe:
1 cup cold organic juice (I chose blueberry/ cranberry) and pour in a bowl. Then sprinkle 4 packets of unflavored gelatin and let sit for 1 minute. Heat up another 3 cups of juice and pour over the cold juice. Now this part is optional- add 2 Tbls of honey or organic sugar. Mix whole mixture for 5 minutes with a metal spoon and then let sit in refrigerator for 2 hours.

This time I added organic cane sugar bc the organic juice is pretty tart. I was expecting the worst ... and so was John... which is often the case with a new healthy recipe. But we were pleasantly surprised. It was very good and a nice healthy treat for the hot Florida weather. Plus an added health tip.... gelatin is very good for digestion. I have seen recipes add it just for that reason. Add unflavored gelatin to aid in digestion for any meal. Maybe we will be eating a little healthy jello as an appetizer around here. Enjoy!

Blackberry and gym membership

Well, when we renewed our contract with alltel, we were up for a new phone. Good thing, because Grant had just broken mine once and for all. Turns out a blackberry would only cost us $20 each...crazy! They are usually about $500 full price... well we each got one and little did I realize how much different our lives would be with them. I was skeptical at first, not wanting to be in the "high tech" phone group, but I am glad we did! Needless to say, i am on the internet much less now, because I can get my emails wherever I am. I just check my phone. I don't have to sit down and turn any computer on because I carry a little computer everywhere I go. It is sad to admit, but I am addicted. I love them :)

I have not had a gym membership in about 2 years! Crazy because the gym is one of my favorite places to go to unwind. I am an ex-workout addict- I was in college and high school... so I finally did something to be selfish in this world of mothering my 1 year old all day everyday...I joined Gainesville Health and Fitness. I must say it is almost as nice as my favorite Golds in Orem, very close! I love going and am now back to being obsessed with working out! I love watching my nighttime shows while I workout- it has been lots of fun :) Thanks for encouraging me John!

Grant loved the beach and the beach loved him! We spent a day at Marco Island and John told me stories from his childhood- driving down I-75 to the Florida beaches. He had some fun memories :) I wish that we could find a little house and move to the beach- I would be a happy mommy! I was able to relax and hang out. It was great!

Naples Beach

We did not end up taking as many pictures as I hoped. Sorry! Here are a few... It was around 65 degrees in the morning- which is why we are dressed warmly! We would go eat breakfast and then walk on the beach every morning. It was so fun. Then we would head back to the hotel and change and hit the waves :) It would warm up to be about 85 degrees by the afternoon. Grant and John were brave enough to get in the water, but not me :) John calls me a "beach snob" because the water has to be warm for me to get in. I am a Floridian... what can I say?

Spring break 2009!!!

Does he look ready for the Florida beaches??? I think a little too ready- thanks to his OCD mom :) We are so excited to go to Naples for a few days- we can't wait!!!!

It's been awhile...

Here are a few pics from a local park. It is pretty fun, but there are always tons of kids here :( Only bad, because they all seem to be sick kids. Grant picked up an upper respiratory virus that has been going around. Oh well... he loved seeing all the kiddos at the park. And then John and Grant were having a little too much fun on Grants toy!
